DESCRIPTION

This product is milled from ripe, wholesome, clean, non-germinated and free from impurities durum wheat grains.
It is free from other flours or pulses, sand and whitening agents.
The flour is free from insects, fungi or other filth.
The flour is suitable for human consumption in accordance with the Codex Alimentarius and existing Cape Verdean food law principles.
It is free from radiation and contaminants which are potential food safety hazards.
The flour is processed, handled and stored in accordance with existing food safety regulations.

ORGANOLEPTIC PROPERTIES:

A slightly yellow fine powder whose appearance varies in accordance to the flour extraction rate. Characteristic flavour and odour.

PACKAGING:

It is sold in 25kg and 50kg polypropylene sacks lined with a double layer kraft paper to ensure a proper preservation of the product.
Sacks should be stored in a cool and dry place.
 

RHEOLOGICAL PROPERTIES:

- Moisture Content – max.14%
- Proteins – average 11,8
- Ash Content – 0,80
- Moist Gluten – 30
 

LABELLING:

The information on the sack should contain the name of the product, the date of packaging, a manufacturer identification and information on the product shelf life.

SHELF LIFE:

The shelf life is 60 days from packaging date.

INTENDED USE:

This soft flour is low in gluten what results in finer texture and makes it particularly appropriate for production of biscuit and other products of the kind.
It must be subjected to heat treatment.

INAPPROPRIATE USE:

It should not be eaten raw.
The product should not be frozen as freezing damages gluten network.
